Lentil and Vegetable Soup

A hearty, fiber-packed soup with lentils and veggies, perfect for meal prep or cozy nights.

Ingredients

  • Lentils (dry, green or brown)1 cup
  • Carrots2, diced
  • Celery2 stalks, diced
  • Onion1, diced
  • Garlic2 cloves, minced
  • Vegetable broth (low-sodium)4 cups
  • Diced tomatoes (canned)1 cup
  • Olive oil1 tbsp
  • Thyme (dried)1 tsp
  • Saltto taste

Instructions

    Heat olive oil in a large pot over medium heat.
