Lentil and Vegetable Soup

Ingredients
- Lentils (dry, green or brown)1 cup
- Carrots2, diced
- Celery2 stalks, diced
- Onion1, diced
- Garlic2 cloves, minced
- Vegetable broth (low-sodium)4 cups
- Diced tomatoes (canned)1 cup
- Olive oil1 tbsp
- Thyme (dried)1 tsp
