Quinoa Stuffed Bell Peppers
Colorful bell peppers stuffed with protein-rich quinoa and veggies, ideal for meal prep.
Ingredients
- Bell peppers4, halved and seeded
- Quinoa (dry)1/2 cup
- Black beans (canned, drained)1 cup
- Corn kernels1/2 cup
- Diced tomatoes (canned)1/2 cup
- Onion1/2, diced
- Olive oil1 tbsp
- Cumin1 tsp
- Chili powder1/2 tsp
- Cheddar cheese (shredded)1/2 cup

Preheat oven to 375°F (190°C).

Cook quinoa according to package instructions.

Heat olive oil in a skillet, sauté onion for 3-4 minutes.

Add black beans, corn, tomatoes, cumin, and chili powder, cook for 5 minutes.

Mix quinoa into the veggie mixture.

Stuff bell pepper halves with quinoa mixture, top with cheese.
