Turkey and Quinoa Power Bowl

A nutrient-dense bowl with lean turkey and quinoa, perfect for a post-workout meal or quick dinner.

Ingredients

  • Ground turkey1/2 lb
  • Quinoa (dry)1/2 cup
  • Kale2 cups, chopped
  • Sweet potato1 medium, diced
  • Olive oil2 tbsp
  • Garlic powder1 tsp
  • Paprika1/2 tsp
  • Lemon juice1 tbsp
  • Saltto taste
  • Black pepperto taste

Instructions

    Cook quinoa according to package instructions, set aside.

    Heat 1 tbsp olive oil in a skillet over medium heat, cook turkey with garlic powder, paprika, salt, and pepper until browned, about 7-8 minutes.

    In a separate pan, roast sweet potato with 1 tbsp olive oil, salt, and pepper at 400°F (200°C) for 15-20 minutes.

    Sauté kale with lemon juice until wilted, about 2-3 minutes.

    Assemble bowls with quinoa, turkey, sweet potato, and kale.
