Baked Tofu with Stir-Fried Veggies

Crispy baked tofu paired with colorful veggies, ideal for a vegan, protein-packed dinner.

Ingredients

  • Tofu (firm)1/2 lb, cubed
  • Broccoli1 cup, florets
  • Bell pepper (yellow)1, sliced
  • Carrots1, sliced
  • Soy sauce (low-sodium)2 tbsp
  • Olive oil2 tbsp
  • Garlic1 clove, minced
  • Ginger (fresh, grated)1 tsp
  • Sesame seeds1 tsp

Instructions

    Preheat oven to 400°F (200°C).

    Toss tofu cubes with 1 tbsp olive oil and 1 tbsp soy sauce, bake on a parchment-lined sheet for 20 minutes, flipping halfway.

    Heat remaining olive oil in a skillet, sauté garlic and ginger for 1 minute.

    Add broccoli, bell pepper, and carrots, stir-fry for 5-7 minutes.

    Add remaining soy sauce, toss with baked tofu, and sprinkle with sesame seeds.
