Mediterranean Chickpea Salad

Ingredients

  • Chickpeas (canned, drained)2 cups
  • Cucumber1, diced
  • Cherry tomatoes1 cup, halved
  • Red onion1/4, finely diced
  • Feta cheese (crumbled)1/2 cup
  • Kalamata olives1/4 cup, pitted
  • Olive oil2 tbsp
  • Lemon juice2 tbsp
  • Parsley (fresh, chopped)2 tbsp

    In a large bowl, combine chickpeas, cucumber, tomatoes, onion, feta, and olives.
