Lentil and Carrot Sliders

Mini vegetarian sliders with lentils and carrots, perfect for a healthy, fiber-rich meal.

Ingredients

  • Lentils (cooked)1 cup
  • Carrots1 cup, grated
  • Whole-wheat breadcrumbs1/2 cup
  • Egg1 large
  • Onion1/4, finely diced
  • Cumin1 tsp
  • Olive oil2 tbsp
  • Slider buns (whole-grain)8
  • Lettuce leaves8 small
  • Saltto taste

Instructions

    In a bowl, mash lentils with a fork, then mix with carrots, breadcrumbs, egg, onion, cumin, and salt.

    Form mixture into 8 small patties.

    Heat olive oil in a skillet over medium heat, cook patties for 3-4 minutes per side until golden.

    Place patties on slider buns with lettuce.
