Lentil and Carrot Sliders
Mini vegetarian sliders with lentils and carrots, perfect for a healthy, fiber-rich meal.
Ingredients
- Lentils (cooked)1 cup
- Carrots1 cup, grated
- Whole-wheat breadcrumbs1/2 cup
- Egg1 large
- Onion1/4, finely diced
- Cumin1 tsp
- Olive oil2 tbsp
- Slider buns (whole-grain)8
- Lettuce leaves8 small
- Saltto taste
Instructions

In a bowl, mash lentils with a fork, then mix with carrots, breadcrumbs, egg, onion, cumin, and salt.

Form mixture into 8 small patties.

Heat olive oil in a skillet over medium heat, cook patties for 3-4 minutes per side until golden.

Place patties on slider buns with lettuce.
