Greek-Inspired Quinoa Salad

A refreshing, protein-packed salad with Mediterranean flavors, perfect for lunch or meal prep.

Ingredients

  • Quinoa (dry)1 cup
  • Cucumber1, diced
  • Cherry tomatoes1 cup, halved
  • Red onion1/4, diced
  • Feta cheese (crumbled)1/2 cup
  • Kalamata olives1/4 cup, pitted
  • Olive oil2 tbsp
  • Lemon juice2 tbsp
  • Oregano (dried)1 tsp
  • Saltto taste

Instructions
