Roasted Vegetable and Hummus Wrap

A fiber-rich, vegan wrap with roasted veggies and creamy hummus, perfect for a quick lunch.

Ingredients

  • Zucchini1, sliced
  • Bell pepper (red)1, sliced
  • Red onion1/2, sliced
  • Hummus1/2 cup
  • Whole-wheat tortillas2 large
  • Olive oil2 tbsp
  • Spinach1 cup
  • Paprika1/2 tsp
  • Saltto taste

Instructions

    Preheat oven to 400°F (200°C).
